I’m about to blow your mind with one of the best tasting things you can make for yourself……and it’s literally just eggs and bananas. Before we get started, let me just highlight some of the amazing benefits of this ridiculously easy meal to make for yourself:
It tastes amazing. Seriously. I don’t know about you, but i definitely don’t think “delectable” when i think of eating straight up eggs. The bananas completely change that. If you cook it right, it’ll actually taste a lot like banana bread.
The nutrition is on point! The typical recipe I make is about:
- 45g Protein
- 52g Carbohydrates
- 25g fat
- ~620 calories
- not to mention loaded with potassium, which is pretty important if you exercise
It’s so damn easy to make. You mash bananas, beat your eggs, mix, and cook in a pan.
It’s versatile! You can eat it straight up, put it on an english muffin with PB for +10 amazeballs, mix in some bacon/breakfast meat, etc.
Ok, so now that you’re sold on how awesome eggs n’ bananas are, how do you prepare it? Easy:
- 2 medium bananas
- 6 large eggs
- bit of cinnamon (not required, but it makes the taste awesome!
Grab your skillet, grease it, turn your stove on medium heat. let the pan warm up before you start cooking the eggs! They’ll cook more consistently.
Mash your bananas in a medium-large bowl. Mash em, mash em real good. You can experiment with this a little bit, if you like your bananas a little more chunky in the final product, mash them less! I like to mash them really well until there are no chunks left in the gooey mixture.
Crack your eggs, one at a time (or all of them at once if you’re a G), add them to the bowl, and mix it all together. EZ-PZ.
- add a couple teaspoons of cinnamon if you fancy.
- Once your pan is heated up, dump the mixture in and cook it just as you’d cook scrambled eggs
TOP SECRET STEP:
The key to making these things taste amazeballs is NOT OVERCOOKING IT! its the same idea with plain old scrambled eggs, take them off the heat just slightly early. They’ll continue to cook in the warm pan, and if you take it off a little prematurely they taste fluffier in my opinion.
